The marble mortar is the best, for several reasons, primarily because it is stable, due to its shape and the material from which it is made, precisely, marble. The marble is cold, and therefore does not allow the basil to oxidize easily,
and then it is porous, and therefore perfect to facilitate the "pounding" gesture.
